You sound a lot like me, while I build based primarily on what clients want, their budget, etc....for myself I go for the bang for the buck also, after a number of IB builds and mobos for my own I picked up an ASRock Z77 Extreme 4 and paired it with a 3570K. I love the mobo, for me it fits the bill and might for you also

While I run a 3570K, I've had a 3770K in it a couple of times with no problems and OCs well, I run my 3570K at 4.6/4.7 and have touched 5 w/ it (too warm/needs to much vCore, but that's typical w/ these CPUs, though 4.7 equates to about 4.9 with the 2500K (the 3rd gen seem about 10-15% faster at equivalent GHz. I've worked with ASRock on the BIOS for higher amounts of DRAM so (at least with a 3570K) it's handled everything I run on it up to it's current 32G 2400/Tridents....with a 3770K should be able to run a min of 16GB at 2800
